Banana Muffins

My mom came back to help me out with my babes a 2nd time (yay!) But she went home last week. I'm on the East coast; she lives in the Midwest (boo!).

When my mom left the first time, my husband took off from work to stay home with me until she returned. So, this was my first week home alone with all 5 kids. My thoughts: Will we make it? Will everyone be fed? Will I maintain the routine? What about schooling? What about diaper changes for two?

Well, God is faithful, all kids have been fed and clean each day. (LOL) And, I have enjoyed many sweet moments along the way. My heart is eager to set about my normal homemaking and child-raising. . . but my body is tired and my days are long and full. {{For example, I've been writing and editing this post since 5/10/13!!!}} So, I try to do what I can, taking it one day at a time.

Anyway, my son has been requesting Banana Muffins for a long time. So we decided to take a school day to make muffins and do a read aloud while they baked. The recipe was super simple, so my children did most of the measuring and mixing while I supervised. They enjoyed themselves.

Yummy!

  1. Isn't it such a blessing to have this time with your children? Think of all they'd miss if they were away from you all day long, (and you'd miss it too.) It sounds like things are coming together for you. I loved hearing your story. God bless.

  2. Stacie, I'm so glad your mom was able to come back to help out. I'm sure you hated to wave good-bye, but you probably want to begin to establish your 'new normal' with your little darlins'! The muffins look delicious... especially prepared by all those sweet little hands!

    1. Hey Mary, you hit the nail on the head. I had such mixed emotions because I didn't want to say good-bye, but I also needed to face the realities of running my day by myself.

      Thanks!
      Take care,
      Stacie
